Survey

At the last staff meeting we shared an update that we were working on a survey to better understand how we should organize the information stored on the Catalyst and Box, and now the survey is ready for launch!

The survey should take you less than 10 minutes. If you have additional feedback or comments, we will be hosting a few focus groups in the future to discuss the redevelopment in more detail.


It is our goal to have the survey analyzed by the next Functional Town Hall on October 22nd, so we are asking that you complete the survey by October 7th.

We really appreciate your time and feedback for the Catalyst and Box, and are looking forward to this next phase in their development.

Functional Townhall

Afternoon, all.  We are planning now for our next Functional Town Hall in October.  For this town hall, we will be hosting a “reverse” town hall.  We’ll be discussing all of the initiatives  and discussion points from our previous meetings this year, and reviewing what we’ve been able to move forward on at this time.

Meal Prep: Breakfast Egg Bites and Slow Cooker Black Bean Soup

Here are some of my staples for meal prep to have food easily ready during the week.  I have the egg bites daily and they are highly versatile with ingredients.  I also use my slow cooker regularly as an easy way to have some meals prepped.  This black bean soup recipe can easily be done while the eggs are in the oven.  Both reheat very well as leftovers.

Egg Bites

Ingredients:

  • 12-14 large eggs
  • Salt and pepper
  • Canned black beans
  • Red bell pepper
  • Baby spinach

The last three, and any other items you wish to add, are all up to you.  I like the creaminess and added protein from some black beans and the crunch from a red bell pepper.  I’ve added cheese, cooked bacon and sausage, asparagus in other versions I’ve made and they all have been good.  With meats or heartier veggies, I would suggest cooking them before adding them into the egg mixture.  Feel free to use what you have in your pantry or other leftovers.

Equipment:

I HIGHLY recommend purchasing a couple of these if you are going to use this recipe on a regular basis.  A non-stick muffin tin works as well although egg will still stick no matter how much spray you use and it is a pain to clean.  Paper muffin liners save on cleaning but often stick to most of the egg bites as well. 

  • Non-stick cooking spray (I prefer an avocado oil spray from Primal Kitchen)
  • Cookie sheet
  • Cooling rack

Directions:

  • Preheat oven to 350 degrees
  • Liberally spray molds or tins with non-stick spray (the spray is your friend)
  • Place molds on cookie sheet for easy transfer to oven
  • Open canned beans and rise, drain in colander
  • Dice bell pepper
  • Add small amounts of beans, diced pepper, and torn baby spinach into molds
  • Season with salt and pepper to your liking
  • Crack 12 – 14 eggs into measuring cup or bowl and mix
  • Pour egg mixture into each mold, about ¾ full
  • Bake 30-35 minutes (length of time depends on how cold your eggs may be in the fridge and how fresh they are) until tops of the egg bites are no longer “wet”
  • Remove from oven and cool in molds until cool enough to touch.  Use fork or knife to go around the edges and remove the egg bites and place on cooling rack. 
  • Refrigerate in an airtight container and reheat in the morning as needed.  I have found that 55 seconds in the microwave works well for 2 egg bites.

Black Bean Soup (Vegan) – Serves 4

Ingredients:

  • 16oz dried black beans (1 bag)
  • 4 cups vegetable broth
  • 3 cups water
  • ½ red onion, diced
  • 1 red bell pepper, diced
  • Dash of hot sauce
  • 3 tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 clove garlic, minced
  • 1 lime, juiced
  • Avocados
  • Tortilla chips

Equipment:

  • Slow Cooker
  • Immersion blender / regular blender
  • Knife and cutting board
  • Ladle
  • Colander

Directions:

  • Rinse dried black beans in colander and inspect for any stones
  • Combine all ingredients except for avocados into slow cooker
  • Turn slow cooker on high for 6 hours
  • Use an immersion blender to achieve desired texture or careful ladle soup into countertop blender and blend in batches
  • Serve with diced avocado on top and chips on the side

Office Return: Update

Several weeks ago I mentioned that we would not plan to re-open our offices until September 8 at the earliest. We continue to monitor the COVID-19 pandemic situation and will now not plan to re-open prior to September 14.  Employees will not be expected to return to our offices until at least that date. 

All of our buildings are open so you can work from your office location if you want.  If you do go in, please practice the strict hygiene and physical distancing protocols sent to you earlier.
